Classic Lemon Bars Courtesy of Food Network Magazine....YUMMM!!!

Classic Lemon Bars

Ingredients

For the Crust:

  • Vegetable oil, for greasing
  • 1 1/2 sticks unsalted butter, diced
  • 2 cups all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/2 cup confectioner's sugar, plus more for garnish
  • 1/4 teaspoon salt

For the Filling:

  • 4 large eggs, plus 2 egg yolks
  • 2 cups granulated sugar
  • 1/3 cup all-purpose flour, sifted
  • 1 teaspoon grated lemon zest
  • 1 cup fresh lemon juice (from about 8 lemons)

Directions

Make the crust: Position a rack in the middle of the oven and preheat to 350 degrees F. Grease a 9-by-13-inch pan with vegetable oil and line with foil, leaving a 2-inch overhang on all sides; grease the foil with oil. Pulse the butter, flour, both sugars and the salt in a food processor until the dough comes together, about 1 minute. Press evenly into the bottom and about 1/2 inch up the sides of the prepared pan, making sure there are no cracks. Bake until the crust is golden, about 25 minutes.

Meanwhile, make the filling: Whisk the whole eggs and yolks, sugar and flour in a bowl until smooth. Whisk in the lemon zest and juice. Remove the crust from the oven and reduce the temperature to 300 degrees F. Pour the filling over the warm crust and return to the oven. Bake until the filling is just set, 30 to 35 minutes.

Let the bars cool in the pan on a rack, then refrigerate until firm, at least 2 hours. Lift out of the pan using the foil and slice. Dust with confectioners' sugar before serving.

INGREDIENTS

1 pouch (1 lb 1.5 oz) Betty Crocker® peanut butter cookie mix
3 tablespoons vegetable oil
1 tablespoon water
1 egg
3 cups miniature marshmallows
2/3 cup light corn syrup
1/4 cup butter or margarine
2 teaspoons vanilla
1 bag (10 oz) peanut butter chips
2 cups crisp rice cereal
2 cups salted peanuts
  1. 1 Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
  2. 2 In large bowl, stir cookie mix, oil, water and egg until soft dough forms. Press dough in pan using floured fingers.
  3. 3 Bake 12 to 15 minutes or until set. Immediately sprinkle marshmallows over crust; bake 1 to 2 minutes longer or until marshmallows begin to puff.
  4. 4 In 4-quart saucepan, cook corn syrup, butter, vanilla and chips over low heat, stirring constantly, until chips are melted. Remove from heat; stir in cereal and nuts. Immediately spoon cereal mixture evenly over marshmallows. Refrigerate 30 minutes or until firm. For bars, cut into 9 rows by 4 rows.

Expert Tips

Skip the cooking spray and line pan with foil for quick cleanup and easy bar removal.
For a different flavor, try milk chocolate or semisweet chocolate chips for the peanut butter chips.

Ready For Spring!

Ok, so I figure I really have had enough of winter already. Sad thing is we have a big snow storm moving in over the next few days, so I don't think it will be anytime soon. In the meantime, I am just going to keep thinking spring! I think I will start by going and making a cute spring card. I love to craft, so maybe I can just get lost in the craft world for a few more weeks. I have my beloved Cricut Expression and my Gypsy that have been long neglected, so I think I will blow the dust off of them and put them to good use. I really do need to start working harder on my kid's scrapbooks, so really there are a lot of things I can do to stay preoccupied until this dreadful winter is over. If any of you out there love your cricut as much as I do and think you are paying too much for your cartridges, I would love to tell you about a website that I use called www.cricutmachine.com . What a fabulous place to get VERY low priced cartridges. Most of the time, they have cartridges starting as low as $16.95! Love that place. Another great site to find cartridges and lots of other craft items is www.ohmycrafts.com. Another one of my favorites! How nice is it to wake up in the morning to be able to grab my cup of coffee and my little girl knowing that I don't have to go anywhere and I still will earn a paycheck for the month? It's priceless! Kids grow up way too fast anyway, so being able to stay at home with them means the world to me! No one telling me at the end of the day that my baby took their first step or said their first word. It's me....I get to be the one to say I saw their first step and hear their first word.

I know that many of us are in that position today where we need that second income, so I feel so blessed that I get the best of both worlds....a paycheck and the comfort of knowing that I'm at home with my children. It's even more exciting when I have just helped another mom or dad, grandma , or grandpa to do the same thing! That's what I do...I help others get to do what I'm doing and let me tell you, it's so rewarding!
